Description
Cichorium intybus
A somewhat woody, perennial herbaceous plant with bright blue flowers, rarely white or pink. Many medicinal uses, but often cultivated for salad leaves. Roots are also roasted as a coffee substitute.
Direct seed or transplant into the garden in early spring or late summer. Prefers full sun and well-draining soil but can tolerate a wide range of conditions. Water well to ensure good germination. Once established, chicory is fairly drought tolerant. Typically grown for roots. Perennial.
